Black Mushroom Rice (Diri ak Djon Djon)

This Black Mushroom Rice (Diri ak Djon Djon) recipe uses Black mushrooms which are native to the northern part of Haiti. Considered a delicacy, they are not used in everyday cooking. When boiled, they release a gray-black coloring, giving this recipe and many others a distinctive aroma, flavor and color. This rice is usually served with a meat or fish dish.

Ingredients

  • 2 Cups of Dried Black Mushrooms (djon djon)
  • 3 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 cups long-grain rice
  • 2 teaspoons salt
  • 1 tsp Ground cloves
  • 1 (12-ounce) can lima beans (or green peas)
  • 1 to 2 thyme sprigs
  • 1 green Scotch bonnet pepper

Method

Step 1

In small pot, soak mushrooms in 4 cups water for 10 minutes.

Step 2

Boil mushrooms on low heat for 10 minutes.

Step 3

Strain the mushroom water into another container for later use. The mushrooms in the strainer will no longer needed.

Step 4

In a large pot, sauté the garlic and onions on medium heat for 2 minutes.

Step 5

Add the rice and stir for 3-5 min.

Step 6

Next, add the mushroom water, salt, cloves and lima beans.

Step 7

Bring the water to a boil and reduce the hear when most of the water evaporates (approximately 10-15 min).

Step 8

Stir the rice, set the temperature to low.

Step 9

Add Scotch bonnet pepper and thyme.

Step 10

Cover the pot and steam the rice for 15 min.

      You can get them from many carribean market’s based on where you live this may not be an option. An alternative would be using Maggie’s Djon Djon cubes.

        Cubes make it black no flavor, the taste comes from mushroom. Its much better! Mushrooms are hard to find but Caribbean markets have them locally.

      Chinese food stores is where I find them. They are dried in packaging. You can also buy Maggi Djon-Djon.

    The maggi cube make the rice black but no taste only the djon djon give a good taste huuuum!

    What do you do with mushrooms after you cook them. Just toss them? Or, can I repurpose it for smth?

      I’m new at this but everywhere I read it says to throw it out. It can’t be used for anything else.

    Do I boil the mushrooms in the same water I had them soaking for 10 min or so I use new water?
